my wife is definitely winning in the getting into vegetarian cooking. Tonight’s Spinach & Tofu Filo Pie from ‘So Vegan in 5’ tasted as good as it looks. It wasn’t quite vegan as the nutritional yeast was substituted by Feta cheese but you cannot win them all.
Not much else to report after another day in the office and a visit to the falafel cafe for lunch. Spent some of the day starting to move office and have resisted the temptation to throw stuff away for now though think I’ll have a new challenge in April sorting and recycling lots of old paper!
P.S. The picture is the whole pie with a slice taken out and not just my portion!

And even if meat comes back into your diet after March I can imagine this experience will change eating habits for good ... So, can we put a ban on having meat in any School of Education catering, when that becomes a thing people contemplate doing again? Respond

You've really committed to it and it looks like the family has too, which is really nice. It's great to have that support around you. You'll have a great collection of recipes after this month. You have learnt about ways to keep your energy levels up and what eating less meat means for the way you shop. Is this something you have done before? You seem to have adapted well so far. I like the reflection in your posts about the practical aspects, the environmental impacts, and the impact on your energy from this new habit change. I am curious, do you find yourself ever forgetting about the challenge sometimes (e.g. on autopilot) or is it starting to feel a bit more integrated in your day-to-day life? It's also interesting that you noticed the rubbish in the hedges. We often find that participants are influenced by each other and may start to pick up on things the other participants are doing. Leonie that is a really good summary and I confess I wouldn't have heard of the word plogging before this though https://www.bbc.co.uk/news/uk-england-bristol-60620374 made the local news yesterday - we should sign them up. The autopilot is a good question - my younger daughter is still eating meat so the smell of cooking bacon and steak on Sunday makes things harder. I still think I'll go to a mixed diet when the month is up as I think I do struggle a bit with long gaps between meals as I am missing the slower release of the protein you get with meat. Respond

Bill - I use a lot of nuts, you get a LOT of slow release of proteins wtih lentils as well - just gives a bit of time for the body to adjust. Also - nothing wrong with a little snack on some nuts between meals. Respond
